How to Cook Artichokes
Artichokes might look funny, but they taste great and are good for you. A single artichoke has only about 60 calories, but is loaded with like calcium, magnesium, and iron. They also contain several B vitamins. This vegetable might be a little intimidating; after all, many people have no idea how to prepare artichokes. But there’s no need to be scared: Artichoke preparation is actually somewhat simple and easy, even for a beginner cook.
Artichokes can be boiled, roasted or grilled. By following the directions below, you’ll be able to enjoy this amazing treat.
Boiled Artichokes
Probably the most used preparation method, boiling artichokes is relatively easy. Start by trimming the top of the artichoke and removing the base of the stem. Then, fill a pot half-way with water. Place the artichoke in the water and boil until the stem is soft. This usually takes about 20-30 minutes. Before serving, turn each artichoke upside-down to drain any water stuck between the leaves.
Roasted Artichokes
Start by trimming the top of the artichoke and removing the base of the stem. Cut the artichoke in half and place in a roasting pan. Drizzle oil olive on each half. Bake the artichokes for 40 to 50 minutes at 375 degrees. Some people enjoy sprinkling lemon juice or rosemary on each half. Be creative! Others enjoy creating a dressing and stuffing the artichoke before it is roasted.
Grilled Artichokes
To grill artichokes, start by trimming and then lightly boiling the artichoke for about 20 minutes. Then, cut the artichoke in half, and remove the inedible portions. Overnight, marinate the artichokes in a blend of olive oil, vinegar, garlic cloves and dried parsley. Other marinades can be used if desired. When you are ready to grill, remove from the marinade and place the vegetable on the grill. Cook each side until golden brown.
Remember that the artichoke heart and the flesh on the vegetables leaves are edible, but the other portions of the artichoke are not. While artichokes may seem like a lot of work at first, I guarantee it is all worth it. Enjoy this special delicacy!
